Yummy Lentil Soup
Ingredients
- 1 tbsp avocado oil
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 3 carrots, chopped
- 3 celery stalks, chopped
- 3 yukon gold potatoes, cubed
- 2 cups dry lentils (brown, red, yellow or green)
- 2 cup chopped fresh tomatoes
- 2 cup chopped kale
- 8 cups vegetable broth
- 1 tsp dried rosemary
- 1/2 tsp ground cumin
- 1/2 tsp dried thyme
- 1/2 tsp ground coriander
- 2 bay leaves
- 1/4 tsp each salt and pepper (plus more to taste)
Preparation
In a large pot over medium heat, add the oil and onion
Stir until fragrant, then add the garlic, salt and pepper
Stir to mix, then add the carrots and celery
Cook while stirring for 3 minutes
Add the cumin, rosemary, thyme, coriander and potatoes
Stir together and cook for an additional minute
Add the tomatoes, lentils and broth
Stir together and bring to a simmer
Cover with a lid and cook on low heat for 40 minutes, stirring periodically (prevents the lentils from clumping together)
Remove bay leaves
Take 2 cups of the soup and blend in a blender (or use an immersion blender or potato masher)
Add blended mixture back to the soup and mix
Add the kale and cook for 5 minutes
