​Easy Creamy Coconut Chickpeas

Ingredients

  • 1-2 tbsp coconut oil or olive oil
  • 1 onion, chopped
  • 4 cloves garlic, crushed
  • 3 tsp curry powder
  • 2 tsp ground cumin
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • 1 tin drained
  • rinsed chickpeas
  • 1 tin chopped tomatoes
  • 2 tbsp tomato purée
  • 1 tin full fat coconut milk
  • salt + pepper (to taste)
  • fresh coriander + lime, to serve

Preparation

  1. Heat the oil in a large pan + sweat the onion + garlic

  2. Mix in all the spices + cook for 1 min

  3. Add in the tin of tomatoes, tomato paste, coconut milk, chickpeas, salt + pepper + stir

  4. Heat until boiling, then turn down to a simmer and cook for 10-15 minutes. Serve with rice or quinoa, coriander + fresh lime juice
