Easy Vegan Lentil Fajita Bowls

Ingredients

  • 1 cup dry lentils
  • 3-4 cups water
  • 1/2 onion, diced
  • olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp chipotle powder
  • 1 tsp chili powder
  • 1/2 tsp sea salt
  • 1/2 cup water
  • 1/2 cup salsa
  • 2 bell peppers
  • 1 onion
  • salt
  • guacamole
  • cooked rice

Preparation

  1. Cook 1 cup of lentils in 3-4 cups of water according to package instructions for 20-25 minutes.

  2. When lentils are almost done, sauté 1/2 diced onion in olive oil for 5 minutes.

  3. Add the cooked lentils, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp chipotle powder, 1 tsp chili powder, 1/2 tsp sea salt, 1/2 cup water, and 1/2 cup salsa to the onion mixture.

  4. Mash about half of the lentils and simmer until the water is absorbed.

  5. In a separate pan, sauté 2 bell peppers and 1 onion in olive oil and salt for 10-12 minutes.

  6. Assemble the bowls with the lentil mixture, sautéed vegetables, guacamole, and rice.
