Lentil Fajita Bowls - Affordable Vegan Chipotle-Inspired Delight

Ingredients

  • 1 cup lentils
  • 3-4 cups water
  • 1/2 diced onion
  • Olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp Chipotle powder
  • 1 tsp chili powder
  • 1/2 tsp sea salt
  • 1/2 cup water
  • 1/2 cup salsa
  • 2 bell peppers
  • 1 onion
  • Guacamole
  • Rice

Preparation

  1. Cook 1 cup of lentils in 3-4 cups of water according to the package instructions (approximately 20-25 minutes).

  2. While the lentils are cooking, sauté 1/2 diced onion in olive oil for 5 minutes.

  3. Add 1 cup of cooked lentils, garlic powder, onion powder, Chipotle powder, chili powder, and sea salt to the sautéed onions.

  4. In the same pan, add the spices, 1/2 cup water, and 1/2 cup salsa. Use mashed about 1/2 of the lentils. Let it simmer for a few minutes until all of the water is absorbed.

  5. In another pan, sauté 2 bell peppers and 1 onion in olive oil and salt for about 10-12 minutes.

  6. Prepare guacamole.

  7. Serve the lentil taco meat, sautéed bell peppers and onion, guacamole, and rice in a bowl.
