Lentil Fajita Bowls - Affordable Vegan Chipotle-Inspired Delight
Ingredients
- 1 cup lentils
- 3-4 cups water
- 1/2 diced onion
- Olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp Chipotle powder
- 1 tsp chili powder
- 1/2 tsp sea salt
- 1/2 cup water
- 1/2 cup salsa
- 2 bell peppers
- 1 onion
- Guacamole
- Rice
Preparation
Cook 1 cup of lentils in 3-4 cups of water according to the package instructions (approximately 20-25 minutes).
While the lentils are cooking, sauté 1/2 diced onion in olive oil for 5 minutes.
Add 1 cup of cooked lentils, garlic powder, onion powder, Chipotle powder, chili powder, and sea salt to the sautéed onions.
In the same pan, add the spices, 1/2 cup water, and 1/2 cup salsa. Use mashed about 1/2 of the lentils. Let it simmer for a few minutes until all of the water is absorbed.
In another pan, sauté 2 bell peppers and 1 onion in olive oil and salt for about 10-12 minutes.
Prepare guacamole.
Serve the lentil taco meat, sautéed bell peppers and onion, guacamole, and rice in a bowl.
