Garlic Spinach Balls with Wholewheat Couscous Meal

Ingredients

  • 2 large cloves of garlic
  • 1 small red chilli
  • large spoonful of vegan buttery flora
  • 400g cannelini beans
  • 1 grated courgette
  • wholewheat couscous
  • stock (for precooking)

Spinach ball components

  • 2 Chia eggs
  • 250g blanched spinach
  • 50g breadcrumbs
  • 3 crushed cloves of garlic
  • salt and pepper

Preparation

  1. Fry 2 large cloves of garlic and 1 small red chilli in a large spoonful of vegan buttery flora.

  2. Add 400g of cannelini beans and saute for 2 minutes.

  3. Add 1 grated courgette and precooked couscous and heat briefly through.

  4. Combine 2 Chia eggs, 250g blanched spinach, 50g breadcrumbs, 3 crushed cloves of garlic, salt and pepper to make spinach balls.

  5. Fry the spinach balls until crispy.
