Southern Curry of King Trumpet Mushroom & Cucumber
Ingredients
- 14 dried red chilli, deseeded and soaked
- 1 tbs chopped lemongrass
- 3 tbs chopped red turmeric (don't sub turmeric powder!)
- 1 tbs chopped red shallot (can sub red onion)
- 3 tbs chopped garlic
- 1 tbs white peppercorns
- large pinch salt
- 5 tbs light soy
- 1 tsp white sugar
- 1 cucumber, peeled, deseeded and cut into even segments
- handful of snake beans cut into 2inch segments (can sub green beans)
- pinch white sugar
- 2 tbs light soy
- 650ml tamarind water (or store bought concentrate)
- 3 tbs oil
Preparation
Marinate mushrooms in marinade for 30 mins. Then place under grill/broiler for 6-8 mins flipping at halfway. Set aside.
Make paste my pounding ingredients in a mortar and pestle.
Heat a pot, add oil. Add paste and fry over high heat for 5-8 mins until colour deepens. Reduce heat, add sugar, soy sauce and tamarind water. Add cucumber, and mushroom. Simmer for 3 mins. Garnish with coriander. Serve with rice
