Spicy Buddha Bowl
Ingredients
- 1 1/2 cup of chopped sweet potato
- 1 tsp of olive oil
- 2 tsp garlic
- 1 1/2 cup of chickpeas
- 1/2 tsp of chili powder
- 1/4 tsp of pink himalayan salt
- 1/4 tsp of black pepper
- 1/4 tsp of paprika
- 1/4 tsp of dried oregano
- 1/8 tsp of tumeric powder
- 1/8 tsp of cayenne pepper
- 3 tbs of filtered water
- 1 cup of kale
- 3/4 tsp of lemon juice
- 3/4 tsp of olive oil
- 1/3 cup of sliced purple cabbage
Preparation
Preheat oven to 350° place potato chinks into a oven safe dish
Cover and bake for 1 hour
Into a cast iron pan on medium heat add olive oil and garlic
Stir until fragrant then add chikpeas
Stir chikpeas for a few minutes then add seasonings continuing to stir
Add water while stirring and turn off heat allowing for liquid to absorb
Add kale into a bowl along with lemon juice and olive oil
Massage kale with hands until kale has soften
Once potatoes are ready remove from oven and allow to cool for 10 minutes
In bowls of choice add kale, potatos, purple cabbage, and chikpeas
Garnish with fresh squeezed lemon juice and dressing of choice(we used our garlic aoli) and enjoy ???? #threebunnies
