Vegan Lo Mein
Ingredients
- •250g. (12oz) dry ramen noodles
- •2 tbsp sesame oil
- •3 fresh onions (separate the white part from the green one)
- •2 garlic cloves
- •2 tsp fresh ginger (minced)
- •1 chili (minced)
- •2 handful of fresh mushrooms
- •1 red pepper
- •1 yellow pepper
- •3-4 carrots
- •1 broccoli
- SAUCE
- •1/2 cup soy sauce (mild)
- •1 tsp sugar •1 tbsp sesame oil
- •1 tbsp sesame seeds
Preparation
Cook the noodles as described on the package. Dry and set aside
Combine all the ingredients of the sauce in a jar and set aside
Chop the vegetables in tiny slices and set aside
Heat a wok over high heat. Add the oil, the ginger, the white part pf the onions, the chili and saute for 1-2 minutes
Add the vegetables and cook 5 minutes, then stir in the noodles and the sauce and cook for another 3-4 minutes (the vegetables should still be crunchy!)
Top with the green part of the onions and the sesame seeds
