Vegan Lo Mein

Ingredients

  • •250g. (12oz) dry ramen noodles
  • •2 tbsp sesame oil
  • •3 fresh onions (separate the white part from the green one)
  • •2 garlic cloves
  • •2 tsp fresh ginger (minced)
  • •1 chili (minced)
  • •2 handful of fresh mushrooms
  • •1 red pepper
  • •1 yellow pepper
  • •3-4 carrots
  • •1 broccoli
  • SAUCE
  • •1/2 cup soy sauce (mild)
  • •1 tsp sugar •1 tbsp sesame oil
  • •1 tbsp sesame seeds

Preparation

  1. Cook the noodles as described on the package. Dry and set aside

  2. Combine all the ingredients of the sauce in a jar and set aside

  3. Chop the vegetables in tiny slices and set aside

  4. Heat a wok over high heat. Add the oil, the ginger, the white part pf the onions, the chili and saute for 1-2 minutes

  5. Add the vegetables and cook 5 minutes, then stir in the noodles and the sauce and cook for another 3-4 minutes (the vegetables should still be crunchy!)

  6. Top with the green part of the onions and the sesame seeds

  7. Enjoy
