Miso Ginger Soup
Ingredients
- 1/2 block of tofu
- Carrot
- Broccoli
- onion (would have used green onion if I had it)
- spinach
- ginger
- garlic
- coriander
- coriander
- sesame oil
- vegetable stock
- nori sheet
Preparation
Cook tofu in a wok until crispy
Add a splash of soy sauce, sesame oil, ginger, garlic and onion. Fry until onion is translucent
Add broth, miso paste and torn up nori sheet. Cover and simmer for around 20 minutes/until veggies are tender
Served over cooked noodles and top with chopped coriander and sesame seeds
