15-Minute Vegan Lentil Stew
Ingredients
- 1/2 onion
- 1 tsp ginger
- 1 clove garlic
- 1 small carrot
- 1 tsp cooking oil
- 1.5 tsp red curry paste
- 1/2 box canned tomatoes
- 1/2 box low fat coconut milk
- 1 tbsp vegetable bouillon
- 1 tsp paprika powder
- a handful of spinach
Preparation
Chop ginger, onion, garlic and carrot in small pieces, fry in cookin pan with oil on medium heat
Add red chili paste then mix + add a tbsp of water to even it out
Then add the rest of the ingredients, bring to a boil, let cook for 5mins
Add spinach & lentils, stir and bAM it’s ready to serve
