15-Minute Vegan Lentil Stew

Ingredients

  • 1/2 onion
  • 1 tsp ginger
  • 1 clove garlic
  • 1 small carrot
  • 1 tsp cooking oil
  • 1.5 tsp red curry paste
  • 1/2 box canned tomatoes
  • 1/2 box low fat coconut milk
  • 1 tbsp vegetable bouillon
  • 1 tsp paprika powder
  • a handful of spinach

Preparation

  1. Chop ginger, onion, garlic and carrot in small pieces, fry in cookin pan with oil on medium heat

  2. Add red chili paste then mix + add a tbsp of water to even it out

  3. Then add the rest of the ingredients, bring to a boil, let cook for 5mins

  4. Add spinach & lentils, stir and bAM it’s ready to serve
