Loaded Potato Lentil Soup

Ingredients

  • 1.5l veg stock
  • 1 can of diced tomatoes
  • 1 tablespoon tomato paste
  • 1 can of lentils
  • 1 can of butter beans
  • 2 potatoes cut into Chunks
  • onion
  • garlic
  • frozen peas
  • risoni (or any other small pasta)
  • soy sauce
  • balsamic vinegar
  • salt & pepper
  • dried thyme
  • spinach

Preparation

  1. Fry potatoes, garlic and onion until onion is translucent

  2. Add stock, tomato paste, a splash of soy sauce, a splash of balsamic vinegar, beans, diced tomatoes and all seasonings. Simmer with the lid on for 10 or so until the potatoes are tender

  3. Taste test your soup and adjust seasonings

  4. Add frozen peas, risoni and spinach. Cook for another 10 minutes
