Pea Mint Soup

Ingredients

  • 1 bunch spring onions chopped
  • 2 new potatoes chopped
  • 1/2 tsp crushed garlic
  • 800ml vegetable stock
  • 800g frozen peas
  • pinch of stevia or xylitol
  • squeeze of lemon
  • plenty of black pepper
  • handful of fresh mint

Preparation

  1. Top with coconut yogurt and toasted chopped nuts

  2. Simply place everything in a large pan and simmer for 10 minutes

  3. Blend until smooth and creamy

  4. Season well then spoon into bowls and serve
