Simple Tofu Vegetable Noodle Stir Fry
Ingredients
- Wholewheat or rice noodles
- Thinly cut vegetables
- Tofu
- Oil
- Soy sauce
- Vegetable stock
- Garlic
- Ginger
- Chili flakes
- Coconut sugar or syrup
- Black pepper
- Fresh lime
Preparation
Fry the tofu in oil and soy sauce.
Prepare the sauce by combining soy sauce, vegetable stock, garlic, ginger, chili flakes, coconut sugar or syrup, and a little black pepper.
Combine the wholewheat or rice noodles, thinly cut vegetables, and the fried tofu, then cover with the sauce.
Add a squeeze of fresh lime before serving.
