Simple Tofu Vegetable Noodle Stir Fry

Ingredients

  • Wholewheat or rice noodles
  • Thinly cut vegetables
  • Tofu
  • Oil
  • Soy sauce
  • Vegetable stock
  • Garlic
  • Ginger
  • Chili flakes
  • Coconut sugar or syrup
  • Black pepper
  • Fresh lime

Preparation

  1. Fry the tofu in oil and soy sauce.

  2. Prepare the sauce by combining soy sauce, vegetable stock, garlic, ginger, chili flakes, coconut sugar or syrup, and a little black pepper.

  3. Combine the wholewheat or rice noodles, thinly cut vegetables, and the fried tofu, then cover with the sauce.

  4. Add a squeeze of fresh lime before serving.
