Satay Tofu Stir Fry

Ingredients

Stir fry

  • 1/2 block of tofu
  • a bag of veg to stir fry (this was for ease and so I could make dinner quickly but just a mix of your fave veg will do)
  • I also added 1/2 a yellow pepper as it was going off

Satay sauce

  • 1 tbsp of peanut butter
  • 1/2 tbsp soy sauce
  • squeeze of lemon juice
  • 1/2-1 tsp chopped or purée ginger
  • 1 tsp minced garlic

Preparation

  1. Cube the tofu and fry until brown and crispy on both sides (about 7 minutes on each side)

  2. Put the tofu in a bowl while you stir fry your vegetables - add the vegetables and a tiny bit of water until still a bit crisp but cooked

  3. Mix your satay sauce

  4. Add the sauce to the vegetables, then add the tofu

  5. Plate with cashews or sesame seeds

Tips

  1. This dish pairs well with noodles or rice for a more complete meal.
