Garlic and Ginger Tofu

Ingredients

  • 1 block tofu
  • 3 garlic cloves, minced
  • 1 thumb-sized piece of ginger, grated
  • 3 tablespoons soy sauce
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons ketjap manis or maple syrup
  • 1/2 onion, sliced
  • Salt and pepper
  • Chilli flakes
  • Fresh coriander
  • 1/2 cup cornflour

Optional vegetables

  • Sliced green peppers
  • Broccoli stems

Preparation

  1. Dry out the tofu by wrapping it in a tea towel and placing something heavy on it for 45 to 60 minutes.

  2. Slice the tofu lengthwise and into triangles.

  3. In a bowl, add the cornflour with a pinch of salt and pepper.

  4. Coat the tofu in the cornflour mixture and gently fry on both sides until golden brown.

  5. In a hot wok, add some oil and fry the broccoli stems. Add the onion and cook for 1 minute.

  6. Add the garlic and ginger and mix well. Add the rest of the vegetables.

  7. Season with chili flakes, salt, and pepper, and add the sauces.

  8. Make a cornflour slurry by mixing the cornflour with water to form a paste. Add this to the mixture and stir until it becomes a thick sauce.

  9. Add the fried tofu and coat well. Sprinkle with fresh coriander and chili.
