Garlic and Ginger Tofu
Ingredients
- 1 block tofu
- 3 garlic cloves, minced
- 1 thumb-sized piece of ginger, grated
- 3 tablespoons soy sauce
- 3 tablespoons apple cider vinegar
- 2 tablespoons ketjap manis or maple syrup
- 1/2 onion, sliced
- Salt and pepper
- Chilli flakes
- Fresh coriander
- 1/2 cup cornflour
Optional vegetables
- Sliced green peppers
- Broccoli stems
Preparation
Dry out the tofu by wrapping it in a tea towel and placing something heavy on it for 45 to 60 minutes.
Slice the tofu lengthwise and into triangles.
In a bowl, add the cornflour with a pinch of salt and pepper.
Coat the tofu in the cornflour mixture and gently fry on both sides until golden brown.
In a hot wok, add some oil and fry the broccoli stems. Add the onion and cook for 1 minute.
Add the garlic and ginger and mix well. Add the rest of the vegetables.
Season with chili flakes, salt, and pepper, and add the sauces.
Make a cornflour slurry by mixing the cornflour with water to form a paste. Add this to the mixture and stir until it becomes a thick sauce.
Add the fried tofu and coat well. Sprinkle with fresh coriander and chili.
