Easy Tofu Noodle Stir-Fry
Ingredients
Sauce
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp lemon juice
- 4 garlic cloves
- 2 tbsp maple syrup
- 2 tbsp water
- 1 tsp chili flakes
Main
- 230g noodles
- 2 tbsp minced ginger
- 2 garlic cloves
- 0.5 tsp chili flakes
- 125g mushrooms
- 6 stalks spring onion
- 2 cups broccoli florets
- 250g fried tofu
Topping
- Sesame seeds
Preparation
Add all ingredients listed under sauce to a small mixing bowl and whisk to combine.
Chop the extra firm tofu block into chunks and fry in sesame oil and a tablespoon of soy sauce until golden brown.
Chop your vegetables into bite-sized chunks.
Boil noodles according to package instructions.
Sauté ginger and garlic in sesame oil for a couple of minutes, then add mushrooms and sauté until golden brown, and add the vegetables and sauté for another 2-4 minutes.
Add the noodles to the pan, pour in the sauce, mix to combine and enjoy.
Tips
You can use any vegetables you have on hand.
This is ideal for lazy dinners.
