Simple Mushroom Stir-Fry with Asian Flavors

Ingredients

  • 350g mixed mushrooms (I used shiitake and pearl oyster)
  • 1 tsp ginger, grated
  • 2 cloves garlic, minced
  • 1 red chilli, chopped (adjust to taste)
  • 2 stalks green onion, chopped (whites and greens separated)

Sauce

  • 1.5 tbsp soy sauce
  • 1.5 tbsp mushroom oyster sauce
  • Small splash dark soy, for colour
  • 1 tsp brown sugar
  • 1/8 tsp ground black pepper
  • 1 tsp sesame oil

Garnish

  • 1 green onion, thinly sliced (for garnish)
  • Sesame seeds

Preparation

  1. Clean and slice your mushrooms. Don’t slice them too thin as they will cook down slightly.

  2. Add water to fill the base of your pan (enough to submerge the mushrooms) and bring to a boil. Add in your mushrooms and boil with lid off. You can choose to either completely boil off the liquid until the pan is dry or drain it off at some stage.

  3. Add a splash of oil into the pan and fry mushrooms until golden. Add in the ginger, garlic, chilli and white parts of the green onion. Fry for another minute until fragrant.

  4. Add in the soy sauce, oyster sauce, dark soy sauce, sugar and pepper and toss well to coat. You can add 1-2 tbsp of water here if needed.

  5. Turn off the heat and add sesame oil. Garnish with green onion and sesame seeds. Serve!
