Glossy Smashed Potatoes with Asian Flavors

Ingredients

  • 10-15 baby potatoes
  • 1 pepper, chopped into cubes
  • 3 spring onions, thinly chopped
  • 1 tablespoon ginger, finely chopped
  • 1 red chili, sliced
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon sriracha
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • Vegetable oil for shallow frying

Preparation

  1. Boil baby potatoes in water until cooked, drain and allow to cool

  2. Smash potatoes and fry in vegetable oil until the skin is crispy or alternately bake until crispy

  3. Heat sesame oil in a pan and add ginger, spring onions and peppers. Cook for a few minutes and add soy sauce, chili and sriracha

  4. Add smashed potatoes and stir in hoisin sauce. Mix well to combine
