Surprisingly Delicious Stir-Fried Cabbage

Ingredients

  • 730g cabbage
  • 1 tbsp vegetable oil for frying
  • 15g minced fresh ginger
  • 80g thinly sliced sweet peppers or bell peppers
  • 15g diced spring onions
  • 1/2 tsp white sugar
  • 4 smashed garlic cloves
  • 2 1/2 tbsp vegan vegetable stir fry sauce
  • 2 tbsp tamari or soy sauce
  • 1 1/2 tbsp rice vinegar
  • 1/2 tbsp chili oil
  • salt to taste

Preparation

  1. Remove the bottom root piece of the cabbage and cut the cabbage in half.

  2. Remove the middle core piece from both cabbage halves.

  3. Separate the cabbage leaves and rip them into medium-sized pieces.

  4. Rinse them well, let the pieces sit for 10 minutes in a large bowl filled with salted water, then drain.

  5. In a large non-stick skillet, heat the vegetable oil to medium heat.

  6. Sauté the minced ginger and garlic for 2 minutes, then add the sweet peppers and cook for another minute.

  7. Mix in the vegetable stir fry sauce, rice vinegar, and sugar, then stir until everything is combined.

  8. Add the spring onions and the cabbage, and sauté for 10 minutes or until the cabbage is cooked but still has a crunch.

  9. Turn off the heat, then mix in the tamari sauce and chili oil.

  10. Serve hot on steamed rice or eat on its own.
