Crispy Smashed Hoisin Potatoes
Ingredients
- 10-15 baby potatoes
- 1 pepper, chopped in cubes
- 3 spring onions, thinly chopped
- 1 T ginger, finely chopped
- 1 red chili, sliced
- 1 T soy sauce or tamari
- 1 T sriracha
- 1 T hoisin sauce
- 1 T sesame oil
- Vegetable oil for shallow frying
Preparation
Boil baby potatoes in water until cooked, then drain and let cool
Smash the potatoes and fry in vegetable oil until the skin is crispy, or bake until crispy
Heat sesame oil in a pan and add ginger, spring onions, and peppers; cook for a few minutes, then add soy sauce, chili, and sriracha
Add the smashed potatoes and stir in hoisin sauce; mix well to combine
