Crispy Smashed Hoisin Potatoes

Ingredients

  • 10-15 baby potatoes
  • 1 bell pepper
  • 3 spring onions
  • 1 tablespoon ginger
  • 1 red chili
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon sriracha
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • Vegetable oil

Preparation

  1. Boil baby potatoes in water until cooked, then drain and let cool

  2. Smash the potatoes and fry in vegetable oil until the skin is crispy; alternatively, bake until crispy

  3. Heat sesame oil in a pan and add ginger, spring onions, and bell pepper. Cook for a few minutes, then add soy sauce, chili, and sriracha

  4. Add the smashed potatoes and stir in hoisin sauce. Mix well to combine
