Pan-Fried Scallion and Toasted Sesame Buns
Ingredients
Wet
- 1 cup warm soy milk or other plant milk
- 1 tbsp sesame oil*
Dry
- 3 cups (375g) all-purpose flour
- 2 tsp instant yeast
- 1/4 cup (55g) sugar
- 1 tbsp toasted sesame seeds*
- 1/2 tsp salt
Scallion & sesame filling
- 2 cups (120g) chopped scallions
- 1/2 tsp salt
- 1/2 tsp Chinese five spice powder, can be subbed with 1/4 tsp white pepper
- 2 tsp toasted sesame seeds*
- 1/3 cup hot neutral oil (microwaved for 2.5 minutes)
For cooking and topping
- Oil and water, for cooking
- Chopped spring onions, for topping
- Toasted sesame seeds, for topping
Preparation
Combine dry ingredients in a bowl
Add wet ingredients and mix until a dough forms
Knead the dough until smooth, then cover and let rise until doubled, about 1 hour
Mix chopped scallions, salt, five spice powder, and toasted sesame seeds in a bowl
Pour hot neutral oil over the scallion mixture and stir to combine
Punch down the risen dough and divide into 12 equal pieces
Roll each piece into a circle, place a portion of filling in the center, and seal the edges to form a bun
Flatten each bun gently
Heat oil in a skillet over medium heat
Place the buns in the skillet and pan-fry until the bottoms are golden, about 2-3 minutes
Add water to the skillet to come halfway up the buns, cover, and steam for 5-7 minutes until cooked through
Uncover and continue cooking until the bottoms are crispy
Sprinkle with chopped spring onions and toasted sesame seeds
