Pan-Fried Scallion and Toasted Sesame Buns

Ingredients

Wet

  • 1 cup warm soy milk or other plant milk
  • 1 tbsp sesame oil*

Dry

  • 3 cups (375g) all-purpose flour
  • 2 tsp instant yeast
  • 1/4 cup (55g) sugar
  • 1 tbsp toasted sesame seeds*
  • 1/2 tsp salt

Scallion & sesame filling

  • 2 cups (120g) chopped scallions
  • 1/2 tsp salt
  • 1/2 tsp Chinese five spice powder, can be subbed with 1/4 tsp white pepper
  • 2 tsp toasted sesame seeds*
  • 1/3 cup hot neutral oil (microwaved for 2.5 minutes)

For cooking and topping

  • Oil and water, for cooking
  • Chopped spring onions, for topping
  • Toasted sesame seeds, for topping

Preparation

  1. Combine dry ingredients in a bowl

  2. Add wet ingredients and mix until a dough forms

  3. Knead the dough until smooth, then cover and let rise until doubled, about 1 hour

  4. Mix chopped scallions, salt, five spice powder, and toasted sesame seeds in a bowl

  5. Pour hot neutral oil over the scallion mixture and stir to combine

  6. Punch down the risen dough and divide into 12 equal pieces

  7. Roll each piece into a circle, place a portion of filling in the center, and seal the edges to form a bun

  8. Flatten each bun gently

  9. Heat oil in a skillet over medium heat

  10. Place the buns in the skillet and pan-fry until the bottoms are golden, about 2-3 minutes

  11. Add water to the skillet to come halfway up the buns, cover, and steam for 5-7 minutes until cooked through

  12. Uncover and continue cooking until the bottoms are crispy

  13. Sprinkle with chopped spring onions and toasted sesame seeds
