Miso Tofu with Sesame Roasted Vegetables
Ingredients
- 450g block firm tofu
- 1 tablespoon miso paste
- 1 tsp minced ginger
- 1 tsp minced garlic
- 2 tablespoons soy sauce
- 4 spring onions
- 1 tablespoon sesame oil
Preparation
Mix the miso, soy sauce, garlic, ginger and spring onions in a bowl; add a couple of tablespoons of water if too dry to make the marinade.
Lay the tofu on a flat tray and pour over the marinade, ensuring it covers and coats completely.
Refrigerate to marinate for as long as possible, then pan fry in sesame oil to cook.
Serve with roasted veggies, smashed potatoes, a sprinkle of sesame seeds and chopped spring onions.
