Broccoli and Cashew Stir Fry

Ingredients

  • 500g tenderstem broccoli
  • 4 spring onions
  • 1 pepper (red or orange)
  • 3/4 cup cashews
  • 3 garlic cloves
  • 2 teaspoons ginger
  • 2 tbsp mirin
  • 3 tbsp soy sauce
  • 1 tbsp Sriracha
  • 2 tbsp honey
  • 2 tablespoons sesame oil
  • Chilli, spring onion, lime and sesame or furikake seasoning to top
  • Rice to serve

Preparation

  1. In one small bowl combine the mirin, soy sauce, sriracha and honey

  2. In another small bowl have the ginger and garlic

  3. Put the oil in a large pan over medium-high heat and heat the oil. Cook the spring onion and pepper for about 5 minutes

  4. Add the garlic and ginger and cook for two more minutes

  5. Add the broccoli and cashews and cook for about 5 minutes

  6. Finally add the sauce and cook for another minute to warm it through

  7. Garnish and serve with rice
