Easy Noodle Stir Fry with Vegetables and Tofu

Ingredients

  • 1 rice noodle nest
  • 3/4 mushrooms
  • 1/3 of a block of tofu
  • Handful of spinach
  • 1 inch piece of ginger
  • 1 garlic clove
  • 1 chilli
  • 2 tsp soya sauce
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds
  • 1 sprig of spring onion

Preparation

  1. Chop up the mushrooms and tofu to bite sized chunks. Finely chop the ginger, garlic and chilli.

  2. In a wok, heat some oil and fry off the mushrooms and tofu so they get a crispy edge, about 5 mins. Prepare the noodles according to packet.

  3. Add in the ginger, chilli and garlic to the wok and toss around allowing to cook for 1-2 mins. Pour over soya sauce for seasoning.

  4. Add the noodles and toss it all around.

  5. Serve with some fresh spring onion and sesame seeds.
