Barbecued Tofu with Spicy Pineapple Sauce

Ingredients

  • 3/4 cup pineapple juice
  • 1 birds eye chilli
  • 1 garlic
  • 1 inch ginger
  • 2 spring onions
  • 1/4 cup coriander
  • 4 tablespoons soya sauce
  • 2 tablespoons coconut or brown sugar
  • 2 tablespoons sriracha
  • 1 tablespoon sesame seeds
  • Juice of 1/2 lemon
  • 2 tablespoons sesame oil
  • 1 block tofu

Preparation

  1. Mix together all listed sauce ingredients

  2. Use 1/4 cup to marinate tofu for 2 hours

  3. Heat the remaining sauce in a pan on low heat, stirring frequently until sticky

  4. Barbecue the marinated tofu, brushing on the sauce

  5. Enjoy in coconut bowls with sticky rice, spooning the remaining sauce on top
