Barbecued Tofu with Spicy Pineapple Sauce
Ingredients
- 3/4 cup pineapple juice
- 1 birds eye chilli
- 1 garlic
- 1 inch ginger
- 2 spring onions
- 1/4 cup coriander
- 4 tablespoons soya sauce
- 2 tablespoons coconut or brown sugar
- 2 tablespoons sriracha
- 1 tablespoon sesame seeds
- Juice of 1/2 lemon
- 2 tablespoons sesame oil
- 1 block tofu
Preparation
Mix together all listed sauce ingredients
Use 1/4 cup to marinate tofu for 2 hours
Heat the remaining sauce in a pan on low heat, stirring frequently until sticky
Barbecue the marinated tofu, brushing on the sauce
Enjoy in coconut bowls with sticky rice, spooning the remaining sauce on top
