Spicy Vegetable Ramen Noodles
Ingredients
- 2 spring onions
- 1/2 tablespoon lemongrass
- 1/2 tablespoon ginger
- 2 bird eye chillies
- 1/4 cup coriander
- 1/4 cup soy sauce
- 1 tablespoon xylitol or sugar
- 1 carrot
- 2 tablespoons sesame oil
- 1 tablespoon toasted sesame seeds
- 2 packets ramen noodles
Preparation
Heat oil in a pan and add spring onions, lemongrass, ginger, chilli, coriander, and carrots. Stir fry for a few minutes then add soy sauce and xylitol.
Add ramen noodles and 1/4 cup water.
Cook with a lid on for 2-3 minutes until noodles are soft.
Garnish with sesame seeds.
