Spicy Vegetable Ramen Noodles

Ingredients

  • 2 spring onions
  • 1/2 tablespoon lemongrass
  • 1/2 tablespoon ginger
  • 2 bird eye chillies
  • 1/4 cup coriander
  • 1/4 cup soy sauce
  • 1 tablespoon xylitol or sugar
  • 1 carrot
  • 2 tablespoons sesame oil
  • 1 tablespoon toasted sesame seeds
  • 2 packets ramen noodles

Preparation

  1. Heat oil in a pan and add spring onions, lemongrass, ginger, chilli, coriander, and carrots. Stir fry for a few minutes then add soy sauce and xylitol.

  2. Add ramen noodles and 1/4 cup water.

  3. Cook with a lid on for 2-3 minutes until noodles are soft.

  4. Garnish with sesame seeds.
