Marinated Tofu and Ramen Dish

Ingredients

  • Firm tofu: 1 block pressed
  • Apple cider vinegar: 4 T
  • Salt: 2 t
  • Oil for frying

Ramen components

  • Spring onions: 2
  • Lemon grass: 1/2 T
  • Ginger: 1/2 T
  • Bird eye chilli: 2
  • Soya sauce: 1/4th C
  • Xylitol or sugar: 1 T
  • Carrot: 1
  • Sesame oil: 2 T
  • Toasted sesame seeds: 1 T
  • Ramen noodles: 2 packets

Preparation

  1. Marinate tofu in vinegar and salt for at least 2 hrs, I marinated overnight. Save the marinating liquid

  2. Fry tofu in oil, carefully spooning on the marinating liquid as tofu is frying. Season as desired

Ramen method

  1. Heat oil in a pan and add spring onions, lemon grass, ginger, chilli and carrots. Stir fry for a few minutes then add soya sauce and xylitol

  2. Add ramen noodles and 1/4th cup water

  3. Cook with a lid on for 2-3 minutes till noodles are soft

  4. Garnish with sesame seeds
