Steamed Spinach and Mushroom Dumplings

Ingredients

  • 2 handfuls of spinach, roughly chopped
  • 100g shitake mushrooms
  • 2 inch piece of ginger
  • 1 garlic clove
  • 1 red chilli
  • 2 sprigs spring onion
  • 1 tbsp tamari
  • 1 tbsp sesame oil
  • 12 chinese dumpling wraps (i buy mine from my local asian supermarket)

Preparation

  1. Chop the mushrooms into small cubes, finely dice the ginger, chilli, garlic & spring onion & chop up the spinach

  2. Heat a pan & then add the sesame oil, sauté everything except for the spinach for about 7-10 mins on a medium heat

  3. Next add the spinach until wilted & the tamari

  4. Have your steamer ready, put a teaspoon of the filling in the middle of the dumpling wraps

  5. Dip your finger in some water & run it along the outside of the wrap, this will help to seal it

  6. Fold the wrap in half & pinch it together, making sure to seal it properly

  7. Repeat with all the dumpling wraps & then steam for 10-12 minutes

  8. Serve along side your favourite dipping sauce- sweet chilli, soy, hoisin
