Easy Tofu and Vegetable Stir-Fry
Ingredients
- 1/2 a courgette
- A handful of chestnut mushrooms
- 1/3 of a pack of tofu
- A handful of spinach
- 1 tbsp sesame oil
- 1-2 tbsp soya sauce
- 1-2 tsp siracha chilli sauce
- 1 tsp of black & white sesame seeds
- 1 garlic clove
- 1 inch piece of ginger
- Brown rice to serve
Preparation
Prepare all vegetables by cutting them into bite-sized pieces and chop ginger and garlic as finely as possible.
Heat a pan and add sesame oil.
Fry the tofu for 10 minutes until crispy on the edges, then remove from the pan and set aside.
Fry the mushrooms for 5 minutes, then fry the courgettes for another 5-7 minutes.
Add garlic and ginger and fry for another 2-3 minutes.
Pour over soya sauce and siracha chilli sauce.
Add spinach and cook until just wilted, then serve with brown rice and sprinkle with sesame seeds.
