Easy Tofu and Vegetable Stir-Fry

Ingredients

  • 1/2 a courgette
  • A handful of chestnut mushrooms
  • 1/3 of a pack of tofu
  • A handful of spinach
  • 1 tbsp sesame oil
  • 1-2 tbsp soya sauce
  • 1-2 tsp siracha chilli sauce
  • 1 tsp of black & white sesame seeds
  • 1 garlic clove
  • 1 inch piece of ginger
  • Brown rice to serve

Preparation

  1. Prepare all vegetables by cutting them into bite-sized pieces and chop ginger and garlic as finely as possible.

  2. Heat a pan and add sesame oil.

  3. Fry the tofu for 10 minutes until crispy on the edges, then remove from the pan and set aside.

  4. Fry the mushrooms for 5 minutes, then fry the courgettes for another 5-7 minutes.

  5. Add garlic and ginger and fry for another 2-3 minutes.

  6. Pour over soya sauce and siracha chilli sauce.

  7. Add spinach and cook until just wilted, then serve with brown rice and sprinkle with sesame seeds.
