Peanut Tofu Zoodles with Sesame Sauce

Ingredients

  • 1 block tofu
  • 4 zucchini
  • Sesame seeds
  • 1 Spring onion
  • Sesame oil
  • Couple of radishes
  • 5 tbsp peanut butter
  • 7 tbsp sesame oil
  • 7 tbsp soy sauce
  • 4 tbsp rice vinegar
  • 2 tbsp sambal olek
  • 2 tbsp sugar
  • 1 garlic clove
  • 1 thumb-sized piece of ginger
  • 3 tbsp water

Preparation

  1. Press the garlic.

  2. Chop the ginger into tiny pieces.

  3. Mix all sauce ingredients together (you can use a jar to shake them together).

  4. Press the tofu and cut it into bite-sized pieces.

  5. Fry the tofu until golden.

  6. Add half of the sauce to the tofu and simmer until browned.

  7. Spiralize the zucchini.

  8. Mix the spiralized zucchini with the remaining sauce.

  9. Serve with the tofu and a couple of sliced radishes on top.
