Honey Garlic Vegan Chicken with Minted Potatoes

- meatless farm chicken breasts
- coconut honey
- soy sauce
- minced garlic
- apple cider vinegar
- baby potatoes

Preparation
Prepare the honey garlic sauce by mixing coconut honey, soy sauce, minced garlic, and apple cider vinegar.
Cook the meatless chicken breasts in a skillet or pan until done, then add the sauce and heat through.
Boil the baby potatoes until tender, drain, and toss with sea salt and chopped mint.
Stir-fry the carrot and courgette until softened.
Serve the chicken with the potatoes and vegetables together.
