Fried Chinese Chives Boxes
Ingredients
Dough
- 400 g flour
- 210 ml water
- 1/2 tsp salt
Filling
- 350g Chinese Chives, finely chopped
- 1 carrot, finely sliced
- 100g shiitake mushrooms, chopped
- 4 cloves garlic, minced
- 2 tbsp oil
Sauce
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tsp white pepper
- 1 tsp ginger powder
- 1 tbsp mushrooms stir fry sauce
- Salt to taste
Preparation
Prepare dough
Add the flour and salt into a big bowl.
Pour water little by little while kneading, adjusting based on flour quality until the dough doesn't stick.
Cover and let the dough rest for 15 minutes.
Make filling
Heat up oil in a wok and add garlic, sauté until fragrant.
Add carrots and cook until soft, then add mushrooms.
Stir in the sauce ingredients and cook for another 2 minutes.
Turn off the heat, add Chinese chives, mix well, and let cool completely.
Assemble and cook
Take out the dough and knead for a few seconds.
Divide the dough into 24 pieces and roll each into a 4.5-inch circle.
Place filling in the middle, seal like a dumpling, and flatten slightly with fold side down.
Heat 2 tablespoons of oil in a frying pan, place boxes fold side down, cover, and cook on medium-low heat.
Flip until both sides are golden brown.
Serve hot with chili oil or your favorite sauce.
