Chinese Chives Boxes with Savory Filling

Ingredients

Dough

  • 400g flour
  • 210ml water
  • 1/2 tsp salt

Filling

  • 350g Chinese Chives, cleaned and finely chopped
  • 1 carrot, finely sliced
  • 100g shiitake mushrooms, chopped
  • 4 cloves garlic, minced
  • 2 tbsp oil
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp white pepper
  • 1 tsp ginger powder
  • 1 tbsp mushrooms stir fry sauce
  • Salt to taste

Preparation

  1. Add flour and salt to a big bowl, pour water gradually while kneading until dough is not sticky (adjust water based on flour quality; add more flour if too soft), cover and let rest for 15 minutes.

  2. For the filling: Heat 2 tbsp oil in a wok, sauté garlic until fragrant, add carrots and cook until soft, then add mushrooms, stir in sauce ingredients (1 tbsp sesame oil, 1 tbsp soy sauce, 1 tsp white pepper, 1 tsp ginger powder, 1 tbsp mushrooms stir fry sauce, and salt to taste) for 2 minutes, turn off heat, add Chinese chives and mix well, let cool completely.

  3. Knead the rested dough for a few seconds, divide into 24 pieces (about 40g each), roll each into a 4.5-inch circle, place filling in the middle, seal like a dumpling, place fold side down and gently flatten.

  4. Heat 2 tbsp oil in a frying pan, place chives boxes fold side down, cover and cook on medium low heat, flip until both sides are golden brown.

  5. Serve hot with chili oil or your favorite sauce.
