Chinese Chives Boxes with Vegetable Filling
Ingredients
Dough
- 400g flour
- 210ml water
- 1/2 tsp salt
Filling
- 350g Chinese Chives, clean & finely chopped
- 1 carrot, finely sliced
- 100g shiitake mushrooms, chopped
- 4 clove garlic, minced
- 2 tbsp oil
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tsp white pepper
- 1 tsp ginger powder
- 1 tbsp mushrooms stir fry sauce
- Salt for taste
Preparation
Add the flour and salt into a big bowl for easy kneading. Pour water little at a time depending on flour quality. Knead until it doesn’t stick, add flour if too soft. Cover and let rest for 15 minutes.
Heat up oil in a wok, add garlic and sauté until fragrant. Add carrots and cook until soft, then add mushrooms. Add sauce ingredients and stir for 2 minutes. Turn off heat, add Chinese chives and mix well. Let it cool completely.
Take out the dough and knead for a few seconds. Divide into 24 pieces (about 40g each). Roll each into a circle about 4.5 inches in diameter. Place filling in the middle and seal like a dumpling. Place fold side down and gently flatten.
Heat 2 tbsp of oil in a frying pan, place fold side down, cover, and cook on medium low heat until golden brown on both sides, flipping as needed.
Serve hot with chilli oil or your favourite sauce.
