Vegan Quinoa Ground Beef Substitute
Ingredients
- 1 cup of quinoa
- Drizzle of olive oil
- 2 cloves of minced garlic
- 3/4 cup of chopped white onion
- 2 tsp of cumin
- 1 tsp of pink Himalayan salt
- 1 tsp of Worcestershire sauce
- 1 tsp of paprika
- 1/2 tsp of black pepper
- 1/2 tsp of oregano
- 1/2 tsp of chili powder
- Sprinkle of cayenne
Cilantro sour cream
- 1/2 cup of sour cream
- 1/4 cup cilantro
- 1/8 cup water
- 2 tsp of lime
- 1/8 tsp of pink salt
- 1/8 tsp of black pepper
Additional toppings
- Greens
- Black beans
- Tomato
- Avocado
- Green onion
- Tortilla chips
Preparation
Cook quinoa until fluffy and set aside.
In a medium-sized pan on medium heat, add olive oil, garlic, and onion; stir until fragrant and add quinoa.
Add remaining ingredients for ground not beef; stir well for a few minutes and set aside.
For cilantro sour cream, combine all ingredients into a blender and blend until all components are well combined.
Pile ingredients onto plate and finish with fresh squeezed lime; serve and enjoy.
