Vegan Quinoa Ground Beef Substitute

Ingredients

  • 1 cup of quinoa
  • Drizzle of olive oil
  • 2 cloves of minced garlic
  • 3/4 cup of chopped white onion
  • 2 tsp of cumin
  • 1 tsp of pink Himalayan salt
  • 1 tsp of Worcestershire sauce
  • 1 tsp of paprika
  • 1/2 tsp of black pepper
  • 1/2 tsp of oregano
  • 1/2 tsp of chili powder
  • Sprinkle of cayenne

Cilantro sour cream

  • 1/2 cup of sour cream
  • 1/4 cup cilantro
  • 1/8 cup water
  • 2 tsp of lime
  • 1/8 tsp of pink salt
  • 1/8 tsp of black pepper

Additional toppings

  • Greens
  • Black beans
  • Tomato
  • Avocado
  • Green onion
  • Tortilla chips

Preparation

  1. Cook quinoa until fluffy and set aside.

  2. In a medium-sized pan on medium heat, add olive oil, garlic, and onion; stir until fragrant and add quinoa.

  3. Add remaining ingredients for ground not beef; stir well for a few minutes and set aside.

  4. For cilantro sour cream, combine all ingredients into a blender and blend until all components are well combined.

  5. Pile ingredients onto plate and finish with fresh squeezed lime; serve and enjoy.
