Banana, Oat & Coconut Loaf

Ingredients

  • 2.5 cups oats ⁠⠀
  • 1 cup shredded coconut ⁠⠀
  • 1 tbsp cinnamon ⁠⠀
  • 1/2 cup psyllium husk ⁠⠀
  • pinch of sea salt ⁠⠀
  • 2 very ripe bananas, firm and mashed ⁠⠀
  • 2 flax / chia eggs ⁠⠀
  • 1 1/4 cup nut milk (i used almond)⁠⠀
  • 1/4 cup rice malt syrup⁠⠀

Preparation

  1. Preheat oven to 180 degrees

  2. Whisk all the wet ingredients together in a bowl

  3. Combine all the dry ingredients in a seperate bowl then mix the two together well

  4. Add to a lined baking tray and bake for 45 minutes

  5. Allow to cool before removing from the tray

  6. Serve with your favourite toppings or eat just on its own

  7. Serves 10-11
