Banana, Oat & Coconut Loaf
Ingredients
- 2.5 cups oats ⠀
- 1 cup shredded coconut ⠀
- 1 tbsp cinnamon ⠀
- 1/2 cup psyllium husk ⠀
- pinch of sea salt ⠀
- 2 very ripe bananas, firm and mashed ⠀
- 2 flax / chia eggs ⠀
- 1 1/4 cup nut milk (i used almond)⠀
- 1/4 cup rice malt syrup⠀
Preparation
Preheat oven to 180 degrees
Whisk all the wet ingredients together in a bowl
Combine all the dry ingredients in a seperate bowl then mix the two together well
Add to a lined baking tray and bake for 45 minutes
Allow to cool before removing from the tray
Serve with your favourite toppings or eat just on its own
