Banana Oat and Coconut Loaf
Ingredients
- 2.5 cups oats
- 1 cup shredded coconut
- 1 tbsp cinnamon
- 1/2 cup psyllium husk
- Pinch of sea salt
- 2 very ripe bananas, firm and mashed
- 2 flax / chia eggs
- 1 1/4 cup nut milk (I used almond)
- 1/4 cup rice malt syrup
Preparation
Preheat oven to 180 degrees.
Whisk all the wet ingredients together in a bowl.
Combine all the dry ingredients in a separate bowl then mix the two together well.
Add to a lined baking tray and bake for 45 minutes.
Allow to cool before removing from the tray.
Serve with your favourite toppings or eat just on its own
