Biscoff Banana Bread

Ingredients

  • 2 bananas
  • 1/3 cup caster sugar
  • 1/3 cup brown sugar
  • 1/2 cup margarine
  • 2 teaspoons vanilla extract
  • 2 cups self raising flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup and 1 heaped tsp of lotus biscoff spread
  • 1/2 cup plant milk (i used soya)
  • optional) about 50g dark chocolate
  • for topping: three lotus biscuits .

Preparation

  1. Preheat the oven to 180 degrees and grease and line a loaf tin

  2. Peel the bananas and place in a mixing bowl

  3. Using the back of a fork, mash the bananas

  4. Add the sugar and margarine to the bowl and mix in

  5. Add all the remaining ingredients to the bowl apart from the chocolate and then mix until combined

  6. Add the chocolate to the bowl and mix in

  7. Scoop the mixture into the loaf tin and flatten the top of the mixture

  8. Crush the biscuits and the scatter on top of the cake mixture

  9. Place in the oven for 40-50 minutes or until a cake skewer comes out clean
