Breakfast Tofu Scramble Tacos

Ingredients

  • Drizzle of olive oil
  • Two blocks of sprouted organic tofu
  • 1 can of unsalted organic black beans
  • 2 handfuls of spinach
  • 1/2 cup of diced peppers
  • Whole grain tortillas
  • 1 tablespoon vegan mayo per tortilla
  • 1 teaspoon hot sauce per tortilla (optional)

Seasonings

  • Turmeric
  • Cumin
  • Himalayan salt
  • Black pepper
  • Garlic powder
  • Nutritional yeast

Preparation

  1. Add olive oil to skillet and heat up pan on low to medium heat.

  2. Chop up the tofu and add to skillet with black beans, diced pepper, seasonings (about 1/2 teaspoon of each, use your discretion).

  3. Cook scramble for 10-15 minutes until slight golden brown.

  4. Lastly, add spinach to prevent overcooking.

  5. Warm up your tortillas and add mayo with your tofu scramble.

  6. Drizzle some hot sauce if you’d like and enjoy.
