Breakfast Tofu Scramble Tacos
Ingredients
- drizzle of olive oil for skillet
- two sprouted organic blocks of tofu
- 1 unsalted organic black beans
- 2 handfuls of spinach
- 1/2 cup of diced peppers
- seasonings- turmeric, cumin, himalayan salt, black pepper, garlic powder, nutritional yeast)
- whole grain tortillas
- 1 tbsp @followyourheart vegan mayo for each tortilla
- 1 tsp of hot sauce for tortilla ( optional )
Preparation
Add olive oil to skillet and heat up pan on low to medium heat
Chop up the tofu and add to skillet with black beans, diced pepper, seasonings (about 1/2 tsp of each, use your discretion) ??
Cook scramble for 10-15 minutes until slight golden brown
Lastly, add spinach
This prevents from your greens being overcooked )? ?
Warm up your tortillas and add mayo with your tofu scramble
Drizzle some hot sauce if you’d like! enjoy
