Chunky Monkey Banana Bread
Ingredients
- 3 bananas
- 1 140ml tin @ayamaustralia coconut milk
- 1/4 cup coconut oil
- 1/3 cup sugar (i did half sweetener, half coconut sugar)
- 1 1/3 cup self raising flour
- 1/2 cup cacao powder
- 1/4 cup chocolate protein powder (@macr0mike)
- 1 tbs cornflour
Preparation
Preheat oven to 170°c
Blend your bananas, coconut milk, coconut oil and sugar until smooth
Stir in remaining ingredients until combined
Pour into a lined loaf tin and add on any additional toppings
I topped mine with banana slices, choc chips and walnuts
Bake for 50 minutes or until cooked through
Store in an airtight container for 3 days of the fridge for 5-7 days
You don’t have to blend, just mash the bananas as well as well as you can so it’s as smooth as possible
