Chunky Monkey Banana Bread

Ingredients

  • 3 bananas
  • 1 140ml tin @ayamaustralia coconut milk
  • 1/4 cup coconut oil
  • 1/3 cup sugar (i did half sweetener, half coconut sugar)
  • 1 1/3 cup self raising flour
  • 1/2 cup cacao powder
  • 1/4 cup chocolate protein powder (@macr0mike)
  • 1 tbs cornflour

Preparation

  1. Preheat oven to 170°c

  2. Blend your bananas, coconut milk, coconut oil and sugar until smooth

  3. Stir in remaining ingredients until combined

  4. Pour into a lined loaf tin and add on any additional toppings

  5. I topped mine with banana slices, choc chips and walnuts

  6. Bake for 50 minutes or until cooked through

  7. Store in an airtight container for 3 days of the fridge for 5-7 days

  8. You don’t have to blend, just mash the bananas as well as well as you can so it’s as smooth as possible
