Chunky Monkey Banana Bread

Ingredients

  • 3 Bananas
  • 1 140ml tin Ayam Australia Coconut Milk
  • 1/4 cup Coconut Oil
  • 1/3 cup Sugar (half sweetener, half coconut sugar)
  • 1 1/3 cup Self Raising Flour
  • 1/2 cup Cacao Powder
  • 1/4 cup Chocolate Protein Powder (Macro Mike)
  • 1 tbs Cornflour

Preparation

  1. Preheat oven to 170°C

  2. Blend the bananas, coconut milk, coconut oil and sugar until smooth

  3. Stir in remaining ingredients until combined

  4. Pour into a lined loaf tin and add on any additional toppings

  5. Bake for 50 minutes or until cooked through

  6. Store in an airtight container for 3 days or in the fridge for 5-7 days
