Vegetarian Mexican Stuffed Peppers Delight

Ingredients

  • 4 peppers
  • 2 cups cooked rice
  • 1/2 onion
  • 1 diced jalapeño (optional)
  • 1 can drained black beans
  • 1 can diced tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • shredded cheddar cheese
  • salsa for serving

Preparation

  1. Cut 4 peppers and discard seeds.

  2. Boil peppers in a large pot for 3 minutes, drain and set aside.

  3. Cook rice.

  4. Sauté 1/2 onion and 1 diced jalapeño if using.

  5. Combine cooked rice, onion mixture, 1 can drained black beans, 1 can diced tomatoes, 2 teaspoons chili powder, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon garlic powder, and season with salt and pepper.

  6. Stuff the mixture into the boiled peppers and top with shredded cheddar cheese.

  7. Bake at 350 degrees for 25 minutes.

  8. Serve with salsa.

Tips

  1. Swap rice for ground beef to make it grain-free.
