Fall Fig Galette
Ingredients
- 2 cups flour
- 1 tbsp coconut sugar
- 1 tsp salt
- 11/4 cup vegan butter, chilled
Preparation
Combine all ingredients into a food processor and mix until it forms a ball. Turn out onto a floured surface and knead. Roll out dough into a disc about 12-14 inches, cover and place in refrigerator for 1 hour.
Cup frozen strawberries 1 1/2 cups fresh figs, chopped, 2 tbsp pure maple syrup, 3/4 cup water. Combine all ingredients into a saucepan and cook down, smashing fruit in the process. Simmer to a nice thickness.
Allow dough to soften slightly so it’s pliable. Place fruit filling on center and spread to an inch and a half from the edge. Fold edges over, place fresh cut figs on top. (I should have placed more, they shrink) Transfer to a baking sheet, place in center of oven. Bake in a 350 degrees oven for 50 minutes
