Homemade Ginger and Date Energy Bars
Ingredients
- 350g dates
- 200g oats
- 100g soft dried apricots
- 50g ground flax seed
- 50g goji berries
- 4 tbsp agave or rice syrup
- 2 tsp ground ginger
Preparation
Whizz the oats in a food processor until finely ground.
Add the dates and apricots and process until they break up into small pieces.
Add the flax, goji berries, syrup, and ginger and process until the mixture comes together.
Press firmly into a small baking tray lined with greaseproof paper.
Remove and cut into 12 bars.
Each bar contains approximately 213 calories, 40g carbs, 3g fat, and 4g protein.
