Gluten-Free Oil-Free Chickpea Quinoa Burgers

Ingredients

  • 1 red onion
  • 1 large carrot
  • large handful baby spinach
  • 1-15oz can chickpeas
  • 2 tbsp nutritional yeast
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2-3/4 tsp chili powder
  • 3/4 tsp chipotle
  • 1-1/2 cups cooked quinoa
  • salt to taste
  • 2 cups garbanzo/chickpea flour
  • 1/4 tsp salt
  • water (about 1 cup)

Preparation

  1. In a large bowl, combine the onion, carrot, spinach, chickpeas, nutritional yeast, cumin, paprika, garlic powder, chili powder, and chipotle, then mix well.

  2. Add the cooked quinoa and mix until evenly incorporated, then add salt to taste.

  3. In a separate bowl, add the garbanzo/chickpea flour and 1/4 tsp salt, then gradually add water while mixing until the consistency is like thick pancake batter (should be about 1 cup water).

  4. Add the batter to the chickpea vegetable quinoa mixture and mix well to combine, then add salt to taste.

  5. Let the mixture sit for about 10 minutes.

  6. Use hands to form patties of desired size, about 3/4 inch thick.

  7. Either pan-fry in a little oil in a non-stick skillet or bake oil-free at 375F on a lined sheet until very golden brown (about 25 minutes), flipping halfway through for both methods.
