Gluten-Free Oil-Free Chickpea Quinoa Vegan Burgers

Ingredients

Burger mixture

  • 1 red onion
  • 1 large carrot
  • large handful baby spinach
  • 1 (15-oz) can chickpeas, rinsed and drained
  • 2 tbsp nutritional yeast
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2-3/4 tsp chili powder, to taste
  • 3/4 tsp chipotle powder
  • 1 1/2 cups cooked quinoa
  • salt, to taste

Batter

  • 2 cups chickpea flour
  • 1/4 tsp salt
  • about 1 cup water

Preparation

  1. Combine red onion, carrot, baby spinach, chickpeas, nutritional yeast, ground cumin, smoked paprika, garlic powder, chili powder, and chipotle powder in a large bowl and mix well

  2. Add cooked quinoa and mix until evenly incorporated

  3. Add salt to taste

  4. In a separate bowl, combine chickpea flour and salt, then gradually add water while mixing until the mixture reaches the consistency of thick pancake batter

  5. Add the batter to the chickpea vegetable quinoa mixture and mix well to combine

  6. Add salt to taste

  7. Let the mixture sit for about 10 minutes

  8. Use hands to form patties of desired size, about 3/4 inch thick

Cooking

  1. Either pan-fry patties in a non-stick skillet with a little oil or bake them oil-free on a lined baking sheet at 375°F until very golden brown, about 25 minutes for baking

  2. Flip patties halfway through cooking
