Baked Turkey Burgers with Sweet Potato Fries

Ingredients

  • 1 pound ground turkey
  • 1/2 red onion, diced
  • 1 small tomato, diced
  • 1 cup spinach, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic
  • 2 sweet potatoes, peeled and sliced into fries
  • 1 tablespoon avocado oil
  • Salt, pepper, garlic, paprika to taste

For serving

  • Romaine or butter lettuce
  • Chipotle mayo
  • Avocado slices

Preparation

  1. Preheat oven to 400 degrees F and line 2 baking sheets with foil and spray with oil

  2. Form turkey mixture into 4 large patties and place on one baking sheet. On the other baking sheet, spread fries out evenly

  3. Bake the burgers on the top rack and fries on the bottom rack for 20-25 minutes or until burgers reach an internal temperature of 165 F. For extra crispiness, keep the fries in a few minutes longer or broil for 1-2 minutes
