Beet Root Burger with Mixed Root Veggie Fries and Vegan Tzatziki
Ingredients
- Beet Root Burger
- Pretzel Bun
- Kalamata Olive Spread
- Red Onion
- Cucumber slices
- Tomato
- Vegan Tzatziki with Feta
- Mixed Root Veggie Fries
Preparation
Prepare the Tzatziki sauce
Grate and squeeze 1 cup of cucumber.
In a bowl, combine 1 1/4 cups of Vegan Sour Cream (or unsweetened Vegan Yogurt), 1/3 cup of Vegan Feta Cheese (crumbled), 3 cloves of pressed garlic (or minced), 2 tbsp of Lemon Juice, 1 tbsp of chopped Dill, 2 tsp of chopped fresh Mint, 1 tsp of Olive Oil, and Salt & Pepper to taste.
Mix well and refrigerate overnight.
Make the Beet Root Burger
Assemble the burger with a Beet Root Burger patty on a Pretzel Bun.
Add Kalamata Olive Spread on top.
Layer with slices of Red Onion, Cucumber, and Tomato.
Spread a generous amount of Vegan Tzatziki with Feta on top.
Serve with a side of Mixed Root Veggie Fries.
