Beet Root Burger with Mixed Root Veggie Fries and Vegan Tzatziki

Ingredients

  • Beet Root Burger
  • Pretzel Bun
  • Kalamata Olive Spread
  • Red Onion
  • Cucumber slices
  • Tomato
  • Vegan Tzatziki with Feta
  • Mixed Root Veggie Fries

Preparation

Prepare the Tzatziki sauce

  1. Grate and squeeze 1 cup of cucumber.

  2. In a bowl, combine 1 1/4 cups of Vegan Sour Cream (or unsweetened Vegan Yogurt), 1/3 cup of Vegan Feta Cheese (crumbled), 3 cloves of pressed garlic (or minced), 2 tbsp of Lemon Juice, 1 tbsp of chopped Dill, 2 tsp of chopped fresh Mint, 1 tsp of Olive Oil, and Salt & Pepper to taste.

  3. Mix well and refrigerate overnight.

Make the Beet Root Burger

  1. Assemble the burger with a Beet Root Burger patty on a Pretzel Bun.

  2. Add Kalamata Olive Spread on top.

  3. Layer with slices of Red Onion, Cucumber, and Tomato.

  4. Spread a generous amount of Vegan Tzatziki with Feta on top.

  1. Serve with a side of Mixed Root Veggie Fries.
