Burgers

Ingredients

  • •1 lb. ground pork (beef or turkey can work too!)
  • •1 teaspoon sea salt
  • •1 teaspoon dried sage
  • •1/2 teaspoon dried thyme
  • •1/2 teaspoon pepper*
  • •1/4 teaspoon red pepper flakes*
  • **Omit for AIP or nightshade free
  • Toppings
  • •4 eggs
  • •optional: seasoning such as salt, pepper, old bay, or flavor god
  • •4 slices of bacon (one for each burger, otherwise use 8 slices: 2 for each burger)
  • •1 avocado, sliced
  • •Two handfuls of spinach
  • •1-2 sweet potatoes (enough for 8 slices or “buns”)*
  • •Coconut oil, for greasing
  • Note: If there is a topping that you don’t like or don’t have, feel free to omit it. Your burger will still be super delicious

Preparation

  1. Preheat oven to 400°F

  2. Cut the sweet potato into ∼1cm thick slices (have at least 8 slices) and coat the slices in coconut oil, place on a baking sheet, and put in the oven for 30 minutes, flipping at 15 minutes

  3. Combine all the ingredients for the burgers and separate into four different patties. Cook on a stovetop or on the grill over medium high heat

  4. Cook the bacon in a pan or skillet

  5. Heat a separate pan over medium heat and add coconut oil. Add the spinach until wilted, then remove

  6. Add more coconut oil to the pan and crack the four eggs into it, cooking them sunny side up

  7. Once the sweet potatoes are finished cooking, you’re ready to layer your burger. I like to go sweet potato, burger, spinach, bacon, avocado slices, egg, then another sweet potato slice, but anything works. Enjoy
