Curried Chickpea Sweet Potato Burger with Grilled Pineapple and Three Carrot Slaw
Ingredients
- 2 cups cooked chickpeas (canned or homemade)
- 1 cup cooked sweet potato
- 1/2 cup cooked quinoa
- 1/3 cup oat flour (or bread crumbs)
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp garlic powder
- 1 tsp onion powder
- salt&pepper
- parsley (fresh or dried)
- add the rest of the ingredients and stir until well combined.
- season to taste.
Preparation
Blend chickpeas and sweet potato in a food processor. (Alternatively mix them with a fork or potato masher)
Add the rest of the ingredients and stir until well combined
Season to taste
Refrigerate for 30 mins or until ready to use. Form 4 patties and cook in a non stick (grilling) pan until slightly golden. Finish baking them at 400 F (200 C) for approximately 15 mins
Serve on whole wheat buns with your favorite choice of toppings
Definitely recommend adding the grilled pineapple, curry sauce, carrot slaw and arugula
