Easy Homemade Bean Burgers with Veggies and Herbs
Ingredients
- 1 onion, chopped
- Cooked, mashed veggies (1 medium carrots, 1/4 butternut squash, 1/4 cauliflower and 1 cup peas)
- 1 can mixed beans, drained and mashed
- 1/2 tsp garam masala
- 1 handful fresh herbs, chopped
- Dash lemon juice
- Breadcrumbs made from 1 crust of bread
- 2 tbsp oats
- 1 tbsp sesame seeds
Preparation
Sauté the onion in a drizzle of olive oil.
Mash the cooked, cooled veggies and beans. We used leftover veggies from a previous meal.
Add in the garam masala, herbs, lemon juice and mix.
Shape into burger shapes.
Place the bread into a food processor with the oats and sesame seeds. Process to crumbs.
Roll the burgers in the crumb coating. Place onto a greased baking tray.
Bake for 25-30 mins at Gas Mark 5/200C.
Serve with salad, salsa and sweet potato wedges.
