Easy Homemade Bean Burgers with Veggies and Herbs

Ingredients

  • 1 onion, chopped
  • Cooked, mashed veggies (1 medium carrots, 1/4 butternut squash, 1/4 cauliflower and 1 cup peas)
  • 1 can mixed beans, drained and mashed
  • 1/2 tsp garam masala
  • 1 handful fresh herbs, chopped
  • Dash lemon juice
  • Breadcrumbs made from 1 crust of bread
  • 2 tbsp oats
  • 1 tbsp sesame seeds

Preparation

  1. Sauté the onion in a drizzle of olive oil.

  2. Mash the cooked, cooled veggies and beans. We used leftover veggies from a previous meal.

  3. Add in the garam masala, herbs, lemon juice and mix.

  4. Shape into burger shapes.

  5. Place the bread into a food processor with the oats and sesame seeds. Process to crumbs.

  6. Roll the burgers in the crumb coating. Place onto a greased baking tray.

  7. Bake for 25-30 mins at Gas Mark 5/200C.

  8. Serve with salad, salsa and sweet potato wedges.
